Oven-Roasted Veggies

1 zucchini
1 summer squash
1 red pepper
1 yellow pepper
1 lb. asparagus
1 onion
3 Tbsp. olive oil
1 tsp. salt
1/2 tsp. pepper

Heat oven to 450 degrees. Place veggies in large roasting pan. Toss with olive oil, salt, and pepper. Spread in single layer. Roast 30 minutes, stirring occasionally until lightly browned and tender.

Britta,
We loved these veggies! We were cooking on the grill and thought why heat up the oven! We wrapped them up in tin foil and threw them on the grill. They were delicious!
